The Ultimate Guide to Cleaning your Commercial Dishwasher
Running a commercial kitchen is no small task and every second counts - your dishwasher is one of your most important pieces of equipment. A well-maintained dishwasher ensures spotless dishes, saves time, and reduces costly breakdowns. In this guide, we’ll cover everything you need to know about commercial dishwasher care, from daily cleaning routines to long-term maintenance tips.
Every year we service and descale over 200 dishwashers, keeping them in tip top condition. But with additional regular maintenance you will improve efficiency and reduce breakdowns.
Daily Cleaning and Maintenance
Keeping your dishwasher clean every day is the single best way to extend its life. Here’s a simple routine your staff can follow:
- Clean the filters and scrap trays: Remove and rinse filters under warm water to prevent food debris from clogging the system.
- Wipe down the interior: Use a soft cloth or sponge to remove grease, limescale and detergent residue.
- Drain and refill the water: Always start each shift or service period with clean water. Dirty wash water reduces performance and increases wear.
- Check spray arms: Make sure the jets aren’t blocked. A toothpick or small brush can help clear build-up.
- Wipe the exterior: Use a non-corrosive stainless-steel cleaner to keep surfaces spotless and rust-free.
- Quality Chemicals: You wouldn't just put any old shampoo in your hair, so don't put any old cleaner in your dishwasher. Our specially formulated ware-washing chemicals look after your cookware and your machine.
Weekly Deep Cleaning
Once a week, schedule a more thorough cleaning session.
- Descale the machine using our descaler, especially as Norfolk is a renowned hard water area.
- Inspect door gaskets for cracks or build-up and order your replacements from us if needed.
- Check temperature settings to confirm the wash and rinse cycles reach the correct heat levels - usually between 60 and 65 degrees Celsius for the wash tank and 78 to 85 degrees Celsius for the rinse.
Water hardness directly affects dishwasher performance. If you notice cloudy glasses or white residue, it’s time to check your water softener system. If you haven't got one or you feel it is not working correctly then please contact us. Most new machines we supply include an internal water softener. A well-maintained softener prevents limescale build-up, which can shorten the life of heating elements and spray jets.
Professional Dishwasher Servicing
Depending on how busy your site is we would recommend a service at least yearly, if not every 3 to 6 months. A service by our engineers takes approximately 2 hours and includes:
- Checking all wash pumps.
- Checking operating temperatures.
- Checking heating elements and contactors.
- Checking seals, tanks and other areas of potential leakage.
- Review your detergent and rinse-aid usage to ensure optimal efficiency.
- Replace or advise on worn parts immediately — a small leak today can become a costly repair tomorrow.
Don't forget, if you buy your commercial dishwasher chemicals from us, you get a yearly service completely Free Of Charge - yes Free!
