Introduction
Michael’s Bistro in Holt, Norfolk, is a popular family-run restaurant known for its seasonal bistro-style food, friendly service, and relaxed yet refined atmosphere. With a strong local reputation and consistently high customer reviews, it stands out as one of Holt’s leading independent dining venues. We wanted to help bring this high quality across in our kitchen redesign.
The project commenced with a full strip-out of all existing equipment, tabling, and the outdated ventilation system, allowing the kitchen to be completely reworked from the ground up. This approach ensured the space could be redesigned to better suit the demands of a busy catering environment.
Following the strip-out, hygienic white uPVC rock wall cladding was installed to create a clean, durable, and food-safe finish. This upgrade not only improves day-to-day cleanliness but also ensures the kitchen meets current food hygiene and compliance standards.
A new canopy and extraction system was installed above the cooking line to efficiently remove cooking fumes and heat. Where external space was limited, an internal scroll fan was integrated within the canopy—providing a compact, effective extraction solution without compromising performance or valuable space.
To complete the refurbishment, bespoke stainless-steel tabling and a custom gantry lighting system were designed, fabricated, and installed by our in-house team. These tailored additions maximise usable workspace, improve visibility across prep areas, and support a more efficient kitchen layout.
The finished kitchen now offers increased plating space, larger preparation areas, and a smoother, more logical workflow—delivering a practical, compliant, and high-performing environment built to support busy catering operations.
